Jack's Cheese Dip

This recipe came from my grandfather. From everything I have heard he was a great cook. This recipe is one of those that hasn't been written down other than the ingredient list.  From memory I put the amount of each ingredient. You can add or detract pending on your taste. Enjoy!

16 ounces sour cream
8 ounce block of cream cheese (softened)
16 ounces cottage cheese
1 1/2  lb. shredded sharp cheddar cheese
4 ounces blue cheese crumbled
1  large onion (grated)
milk (optional)
salt & pepper to taste

Cream together sour cream & cream cheese until smooth, add cottage cheese and mix well until combined. Fold in cheddar, blue cheese and onion until combined. If mixture is too thick add milk to desired consistency. Salt and pepper to taste. Store in air-tight container in refrigerator 2-4 hours or overnight before serving. You may need to add more milk to thin in the morning.

Serve with chips or vegetables. Frito Corn chips are my favorite with this.
