Jack's Fish Cakes

My mom made these all the time when I was a kid, the recipe comes from her dad and they are good hot or cold. At midnight when you are craving one the microwave is too much work. I hope you enjoy these as much as I do.

10-15 potatoes peeled & grated (about 3 lbs.)
1 large onion grated
2 5 ounce cans of tuna in water (drained)*
2 eggs slightly beaten
2 tbls flour
salt & pepper to taster
vegetable or canola oil

Fit your food processor with the grating blade and grate all the peeled potatoes. Place them in a colander lined with a flour sack towel and let them drain. You can squeeze the liquid out. The potatoes may turn brown but it won't affect the taste.  Place potatoes in large bowl. Grate onion and drain tuna and add to potatoes and combine. Add eggs and flour to mixture along with salt & pepper and mix.

In a large frying pan heat enough oil to coat bottom of pan 1/4 inch and bring to 350 degrees. With a tablespoon form potato mixture into a patty and place in oil. Fry until bottom is golden brown turn over and repeat for the second side. Drain on paper towels, salt if needed, and keep warm in a 200 degree oven.

*You can substitute salmon, trout, or any favorite fish.
