Spicy Plum Sauce

Plums & Thai Chiles
5 Ripe Plums pitted and chopped
2 tbls. Red Onion, chopped
1 tbls. Champagne Vinegar
3 tbls. Sugar (add more to taste, optional)
1 Thai Chile Pepper, chopped
   (can be omitted or increased depending on your heat tolerance)
1/4 Cup Water
Salt & Pepper to taste

Plums starting to break down

Pit and chop plums. Add to heavy bottom sauce pan. Add red Onion, vinegar, sugar, chile pepper, and water to pan. Stir to mix and put burner on medium heat and simmer until plums break down. Puree ingredients with immersion blender. Add salt and pepper to taste and adjust sweetness to taste.


Plum Sauce over duck breast

Keep warm and server over duck, pork, or chicken.
